Grilled Italian Chicken with roasted tomato sauce
Tonights Dinner was so delicious. It was Grilled Italian Chicken with roasted tomato sauce.
-Bake 4 boneless skinless chicken breasts in oven at 375 degrees for 30-45 minutes (until done)
-Dice 4 medium size tomatoes, cut into chunks, drizzle olive oil, season with salt & pepper. Put in glass oven safe dish for 25 minutes. (or any oven safe dish is fine)
-Chop 1 small onion, dice 1 jalepeno, 4 cloves garlic, chop 2 green onions (set aside until tomatoes are done)
-Spray pan with non-stick cooking spray. Toss in onion,jalepno, garlic mixture and start cooking.
-Add roasted tomato, cook for about 3 minutes until well blended.
-Remove chicken from oven
-Plate your chicken, then pour tomato sauce mixture over and Enjoy!
-We added a spinach salad on the side, I was super full and pleased with how this dinner turned out.
